Vidalia Onion Soup

Ingredients

  • 4 to 5 large onions, sliced
  • 3 Tbsp. butter or oleo
  • 1/4 tsp. pepper
  • 1 Tbsp. flour
  • 6 c. beef broth (canned is best or 6 cubes and 6 c. water)
  • 6 to 8 slices French bread, toasted
  • 1/2 to 1 c. Swiss cheese, grated
  • 1/2 to 1 c. Mozzarella cheese, grated

Directions

    Saute onions in butter; add pepper.

    Cook until lightly browned.

    Sprinkle onions with flour; cook 1 minute, stirring constantly.

    Add beef broth and simmer 30 minutes.

    Taste and add salt to taste.

    Place soup in individual ovenproof dishes.

    Place toast on top and sprinkle with cheese.

    Place under broiler or in 400° oven until cheese is melted.
