Vidalia Onion Soup

Ingredients
- 4 to 5 large onions, sliced
- 3 Tbsp. butter or oleo
- 1/4 tsp. pepper
- 1 Tbsp. flour
- 6 c. beef broth (canned is best or 6 cubes and 6 c. water)
- 6 to 8 slices French bread, toasted
- 1/2 to 1 c. Swiss cheese, grated
- 1/2 to 1 c. Mozzarella cheese, grated
Directions

1Saute onions in butter; add pepper.

2Cook until lightly browned.

3Sprinkle onions with flour; cook 1 minute, stirring constantly.

4Add beef broth and simmer 30 minutes.

5Taste and add salt to taste.

6Place soup in individual ovenproof dishes.

7Place toast on top and sprinkle with cheese.

8Place under broiler or in 400° oven until cheese is melted.

9Serves 6.
