- 1 1/2 c. sugar
- 3 Tbsp. cornstarch
- 1 1/2 c. hot water
- 1/4 tsp. cream of tartar
- 4 or 5 Tbsp. vinegar
- 1 Tbsp. oleo
- 2 eggs, separated
- 1 (8-inch) baked pie shell
Directions

1Mix 1 1/4 cups sugar and cornstarch in a saucepan.

2Stir in water, vinegar, and butter.

3Cook over medium heat, stirring constantly until thick.

4Remove from heat.

5In a small dish, beat egg yolks into a small amount of mixture, then add this back to the saucepan.

6Return to heat and cook 3 minutes more.

7Pour into the pie shell.

8Cool.

9In a medium bowl, beat egg whites with cream of tartar; gradually add the other 1/4 cup sugar.

10Beat until stiff. Spread over pie and bake at 350° for 10 to 15 minutes.
