- 4 Tbsp. oleo
- 2/3 c. vodka
- 1 tsp. red pepper flakes
- 2 c. diced or stewed tomatoes
- 1 tsp. salt
- 1 c. heavy cream (no substitutions; can use evaporated milk)
- 3/4 c. grated Parmesan cheese (no low or low-fat)
- 1 lb. penne, penne regatta or ziti pasta
Directions

1Cook pasta according to directions on package.

2Drain.

3While pasta is cooking, heat oleo in large skillet over medium, low heat.

4Stir in vodka and red pepper.

5Heat gently 3 to 4 minutes. Add tomatoes and salt.

6Increase heat; cook until thick, about 10 minutes.

7Stir in cream and cheese.

8Serve over cooked pasta.
