  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • 1/2 cup Yellow onion, small dice
  • 28 ounces Whole tomatoes, canned and drained
  • 1 cup Heavy cream
  • 1/4 cup Vodka
  • 1/4 teaspoons Pepper flakes (optional)
  • 1 1/2 pounds Penne
  • 1/4 cup Parlsey

Directions

    Saute the onion in the olive oil and butter

    With your fingers, break up the tomatoes into smaller pieces

    Add to onion mixture.

    Gently simmer for 20 minutes

    Add the cream, vodka and pepper flakes if using. Season with salt and pepper and simmer 10 minutes

    While tomatoes are simmering, cook the penne in well salted water. Drain when al dente. Drizzle with a little oil if you are not ready to serve it yet.

    Plate the penne and spoon vodka sauce over pasta. Garnish with parsley.
