Walnut Banana Bread

  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 1/3 cup vegetable oil
  • 3 bananas peeled and sliced
  • 1 3/4 cups all purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 2/3 cup whole milk or 2%
  • 1 1/4 cups walnuts chopped
  • 3 ounces dark chocolate chopped
  • powdered sugar for dusting
  • whipped cream for serving

Directions

    Preheat oven to 350°F. Whisk together the eggs, vanilla extract, sugar and oil then fold in the banana slices, flour, baking powder, cinnamon and a pinch of salt. Stir in the milk, 3/4 cup walnuts and chocolate.

    Transfer to a cake pan, smooth the top, sprinkle with the remaining nuts and bake for about 50-60 mins, until a knife inserted in the center comes out clean. Let cool for 15-20 mins in the cake pan before removing to finish cooling on a wire rack. Dust with powdered sugar and serve with whipped cream.
