- 1 1/2 cups natural bran
- 1 cup buttermilk
- 1/3 cup canola oil
- 1 egg (beaten)
- 2/3 cup brown sugar
- 1/2 teaspoon vanilla
- 1 cup flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup walnuts (chopped)
Directions

1Heat oven 375.

2Combine the bran and buttermilk. Let stand 10 minutes.

3Combine the oil, egg, sugar and vanilla. Add to bran mix.

4Combine the flour, baking soda and powder, cinnamon and salt.

5Add to bran mix. Stir in walnuts.

6Spoon into sprayed muffin tins.

7Bake 15-20 minutes.
