Walnut Bread With Coffee Icing

Ingredients

  • 1 cup granulated sugar
  • 1/2 cup butter, chopped
  • 1/2 cup 2% milk
  • 2 tbsp instant coffee powder
  • 1/3 cup self-rising flour
  • 2 tsp ground cinnamon
  • 2 None eggs, beaten
  • 1/2 cup toasted walnuts, 1/4 cup chopped
  • None None Coffee Icing
  • 2 tsp instant coffee powder, dissolved in 1 tbsp boiling water
  • 1 cup powdered sugar, sifted
  • 1 tbsp butter, softened

Directions

    Preheat oven to 350°F. Lightly grease and line a 10x4 inch loaf pan.

    In a small saucepan, combine sugar, butter, milk and coffee. Stir over medium heat until melted. Set aside. Sift flour and cinnamon into a large bowl. Add eggs, butter mixture and chopped walnuts. Transfer to prepared pan and bake for 15 mins. Sprinkle remaining walnuts over top and bake for 25-30 mins, until a skewer inserted in the center comes out clean. Invert onto a wire rack to cool.

    Meanwhile, to make the icing, stir coffee, powdered sugar and butter over a double boiler until smooth. Drizzle over cake. Slice and serve.
