Ingredients

  • 1 cup raisins OR Sultanas
  • 1/2 cup apple juice
  • 1/4 cup self-raising flour
  • 1/2 cup caster sugar OR 4 tablespoons of STEVIA
  • 1 cup walnuts
  • 1 tablespoon spice Cinnamon
  • 2 apples small, peeled and grated
  • 1 beaten egg
  • 1 cup milk
  • 80 grams butter

    Take the Sultanas OR Raisins and soak them in the half a cup of Apple juice

    Grease and line a loaf tin
  3. 3
    Preheat the oven to 180 degrees , fan assisted

    Sift the flour into a large mixing bowl
  5. 5
    Mix all dry ingredients together in the mixing bowl
  6. 6
    Peel and grate 1 large Apple OR 2 small apples into the mixing bowl

    Put the milk and butter together in a pan and heat through until the butter has melted , stir together.

    Place sultanas/raisins into the bowl , do not drain the excess liquid away

    Add in a beaten egg

    Add in the milk and butter liquid

    Stir all ingredients and mix well

    Put the cake mixture into the loaf tin and place in oven for approx 35 mins
