- 3 chicken breast halves
- 2 1/2 Tbsp. soy sauce
- 3/4 c. condensed chicken broth
- 2 tsp. cornstarch
- 3 Tbsp. oil (or more)
- 1 c. sliced celery
- 1 c. onion in wedges
- 1/4 c. green pepper strips
- 1/2 c. cashews
- 1 1/2 c. snow peas or 1 pkg. frozen
- 1 1/2 c. sliced mushrooms
- ginger to taste
Directions

1Toss meat with 1 1/2 teaspoons soy sauce; set aside.

2Combine broth with cornstarch and rest of soy sauce. Heat 1 tablespoon oil.

3Add meat and stir-fry.

4Remove meat.

5Add remaining oil and vegetables; stir-fry.

6Add broth mixture to vegetables and boil. Add meat and nuts.

7Heat 1 minute.

8Add ginger.
