Ingredients

  • 3 chicken breast halves
  • 2 1/2 Tbsp. soy sauce
  • 3/4 c. condensed chicken broth
  • 2 tsp. cornstarch
  • 3 Tbsp. oil (or more)
  • 1 c. sliced celery
  • 1 c. onion in wedges
  • 1/4 c. green pepper strips
  • 1/2 c. cashews
  • 1 1/2 c. snow peas or 1 pkg. frozen
  • 1 1/2 c. sliced mushrooms
  • ginger to taste

Directions

    Toss meat with 1 1/2 teaspoons soy sauce; set aside.

    Combine broth with cornstarch and rest of soy sauce. Heat 1 tablespoon oil.

    Add meat and stir-fry.

    Remove meat.

    Add remaining oil and vegetables; stir-fry.

    Add broth mixture to vegetables and boil. Add meat and nuts.

    Heat 1 minute.

    Add ginger.
