- 1 lb. (2 c.) prepared chicken salad
- 1/3 c. chopped walnuts, toasted *
- 1 tsp. Dijon mustard
- 1/2 tsp. dried tarragon leaves, crushed
- 1 small cantaloupe or honeydew melon, cut into quarters, lengthwise, seeds and rind removed
- spinach or lettuce leaves
Directions

1In medium bowl, combine chicken salad, chopped walnuts, mustard and tarragon; mix well.

2Cut each cantaloupe quarter lengthwise into 4 slices.

3Arrange 4 slices on each of 4 spinach-lined plates. Spoon 1/2 cup chicken mixture onto each plate next to cantaloupe slices.

4Garnish with walnut halves.
