- 1 large egg
- 1 large egg yolk
- 1/2 cup caster sugar (4 oz)
- 1/2 teaspoon vanilla extract
- 2 tablespoons all-purpose flour, sifted
- 1 1/4 cups chopped walnuts (5 oz)
Directions

1Preheat oven to 315°F/160°C.

2Beat the egg, egg yolk, sugar and vanilla until well combined.

3Add the sifted flour and stir until smooth.

4Fold in the chopped walnuts.

5Using a teaspoon, drop dough mixture well apart onto parchment-lined baking tray.

6Flatten slightly with fork.

7Bake for 15-17 minutes (until golden and crisp).

8Allow to cool on trays.
