Walnut Fried Shrimp

  • 1 lb. extra large fresh shrimp
  • 2 c. all-purpose flour
  • 1/4 tsp. pepper
  • 1/4 tsp. salt
  • 1 c. milk
  • 2 eggs, lightly beaten
  • 2 c. ground walnuts
  • vegetable oil

    Peel and devein shrimp, leaving tails intact.

    Rinse well and set aside.

    Combine flour, pepper and salt; stir well.

    Combine milk and eggs; stir well.

    Dip shrimp in egg mixture; dredge in flour mixture.

    Dip shrimp in egg mixture again and dredge in ground walnuts.

    Place coated shrimp on a wax paper lined baking sheet; cover and freeze 2 hours.

    Fry shrimp, a few at a time, in deep hot oil (350°) 3 minutes or until golden brown.

    Drain on paper towels.
