- 4 eggs
- 1/2 c. tofu (firm is best) or 1/2 c. half and half
- 3/4 c. maple syrup
- 1/2 tsp. vanilla extract
- 1 c. walnuts, chopped
- pinch of salt
- 9-inch pie crust, partially baked or graham cracker crust
Directions

1Preheat oven to 350°.

2In food processor, blend the eggs, maple syrup and tofu.

3Add the vanilla extract and salt.

4Put walnuts in bottom of crust.

5Pour in egg mixture.

6Place in oven for 30 minutes until center is firm. Allow to cool before cutting.
