Walnut Pie

  • 4 eggs
  • 1/2 c. tofu (firm is best) or 1/2 c. half and half
  • 3/4 c. maple syrup
  • 1/2 tsp. vanilla extract
  • 1 c. walnuts, chopped
  • pinch of salt
  • 9-inch pie crust, partially baked or graham cracker crust

Directions

    Preheat oven to 350°.

    In food processor, blend the eggs, maple syrup and tofu.

    Add the vanilla extract and salt.

    Put walnuts in bottom of crust.

    Pour in egg mixture.

    Place in oven for 30 minutes until center is firm. Allow to cool before cutting.
