- 2/3 cups cream cheese, softened
- 1/3 cup butter, softened
- 1-1/2 cups sugar
- 2 egg whites
- 1 egg
- 1-1/2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 cup buttermilk
- 2 cups fresh or frozen raspberries
- 1/4 cup chopped walnuts

11. In a large mixing bowl, beat the cream cheese, butter and sugar until light and fluffy. Add the egg whites, egg and vanilla; beat well. Combine the flour, baking powder and baking soda; add to creamed mixture alternately with buttermilk. Fold in the raspberries and walnuts.

22. Fill paper-lined muffin cups three fourths full. Bake at 350 for 20-24 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.
