- 2 c. cooked rice
- 3 Tbsp. olive oil
- 1 tomato
- 1 small cucumber
- 3 or 4 green onions
- 3 Tbsp. soy sauce
- 1 egg
Directions

1Put olive oil in deep nonstick pan.

2Add cooked rice and egg. Cook until egg is done and rice is hot.

3Add soy sauce.

4Dice up tomato, onions and cucumber.

5Add the hot rice to them.

6You can add more soy sauce to it if you like.

7Serve warm.
