  • 4 c. coleslaw mix (with red and green cabbage and carrot)
  • 13 c. dried cranberries
  • 1/4 c. thinly sliced red onion strips
  • 3 tbsp. cider or rice wine vinegar
  • 2 tbsp. maple syrup
  • 1/2 tsp. kosher salt
  • 13 c. toasted walnuts

    Spray a large nonstick skillet with cooking spray and heat over medium heat.

    Add coleslaw mix, cranberries, and red onion.

    Cook 3 minutes, tossing mixture frequently, until it starts to soften.

    Cook 1 minute longer, stirring, until evenly dressed.
