  • 1 lemon, juice, and grated rind
  • water equal to the amount of juice from the lemon
  • 25 large marshmallows, cut in half
  • 3 egg yolks, beaten
  • 3 egg whites, beaten
  • 1 pinch salt
  • baked pie shell

Directions

    Juice 1 lemon and grate the rind.

    add as much water as there is juice.

    Put in double boiler and add marshmallows.

    When thoroughly melted, add beaten yolks and cook until thick.

    Add beaten whites.

    Stir well.

    Cool slightly.

    Pour into baked Pie shell.

    Serve with whipped cream topping.
