  • 3 eggs
  • 1 1/2 c. sugar
  • 1 c. oil
  • 2 c. flour
  • 2 tsp. cinnamon
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. vanilla
  • 1 c. chopped nuts
  • 4 c. thinly sliced apples (about 5)

Directions

    In large bowl, beat eggs at high speed until light and thick. Combine sugar and oil; beat into eggs.

    Stir together flour, cinnamon, baking soda and salt.

    Add to egg mixture, along with vanilla.

    Stir in nuts.

    Spread apples in buttered 13 x 9-inch pan.

    Pour batter over apples, spreading to cover.

    Bake at 350° for 1 hour or until top is pale golden and apples are done.

    Cool. If desired, spread with Cream Cheese Icing.
