  • watermelon rind (white only)
  • 4 c. vinegar
  • 12 c. sugar
  • 1 pkg. stick cinnamon
  • 2 Tbsp. whole cloves
  • 1 tsp. alum

Directions

    Peel rind from melon.

    Cut off green outer rind and any pink flesh.

    Cut into bite-size pieces.

    Cover with water and add alum. Stir and bring to a boil.

    Simmer for 1 hour.

    Combine vinegar, sugar and spices and bring to a boil.

    Add the rind and bring to a boil again.

    Place in jars and seal.
