Ingredients
- 6 lb. watermelon rind
- 1/2 oz. alum
- 4 1/2 lb. sugar
- 3 lemons
Directions

1Trim off all green rind and any remaining pink meat.

2Cut rind into 1/2-inch squares.

3Dissolve alum in enough water to cover rind; let stand overnight.

4Drain and weigh (6 pounds).

5Slice lemon very thin; remove seeds.

6Put all ingredients in large pot with 1/2 cup water.

7Let stand for 1 hour.

8Bring to a boil; simmer until melon is clear.

9Skim out melon pieces.
-
10Boil syrup until heavy.
-
11Return fruit; bring to boiling point.

12Seal in sterilized jars.
