  • 2 Tablespoons Olive Oil
  • 1-1/2 pound Lean Ground Beef
  • 1 Large Onion, Chopped
  • 1 Green Bell Pepper, Chopped
  • 2 cloves Garlic, Minced
  • 1-1/2 cup Chicken Broth
  • 1 Tablespoon Cumin
  • 2 Tablespoons Chili Powder
  • 1-1/2 teaspoon Coriander
  • 1 teaspoon Oregano
  • 1 whole Jalapeno Pepper, Chopped
  • 1 can (8 Oz. Size) Tomato Sauce
  • 2 cans (15 Oz. Size) Fire Roasted Diced Tomatoes
  • 1 can (15 Oz. Size) Black Beans, Drained
  • 1 can (15 Oz. Size) Kidney Beans, Partially Drained

    In a skillet over medium heat, combine the oil, beef, onion, bell pepper, and garlic. Brown until ground beef is no longer pink. Drain and spoon meat mixture into a stock pot and add the rest of the ingredients. Allow to simmer for 15-20 minutes. Serve warm, garnish with sour cream, shredded cheese and cilantro.
