- 500 grams Tomatoes
- 1 to 2 tablespoons Onions, finely chopped
- 1 Zucchini, eggplant, etc.
- 3 tbsp * Vinegar
- 5 tbsp * Olive oil
- 1 tbsp * Sugar (or honey)
- 1/2 tsp plus * Salt
- 5 to 6 * Peppercorns
- 1 * Bay leaf
- 1 * Soy sauce
Directions

1Combine the marinade ingredients.

2Remove the cores from the tomatoes.

3Put them briefly in boiling water, and peel.

4Chop up the tomatoes and add to the marinade.

5Add the chopped onion and marinate for 3 hours to overnight.

6Variation: Mix the marinated tomatoes with zucchini on a plate.

7Pour over the marinade.

8If you marinate the tomatoes for 3 to 4 hours or overnight, a lot of juice will come out of the tomatoes, and they will become sweet and flavorful.
