  • 500 grams Tomatoes
  • 1 to 2 tablespoons Onions, finely chopped
  • 1 Zucchini, eggplant, etc.
  • 3 tbsp * Vinegar
  • 5 tbsp * Olive oil
  • 1 tbsp * Sugar (or honey)
  • 1/2 tsp plus * Salt
  • 5 to 6 * Peppercorns
  • 1 * Bay leaf
  • 1 * Soy sauce

    Combine the marinade ingredients.

    Remove the cores from the tomatoes.

    Put them briefly in boiling water, and peel.

    Chop up the tomatoes and add to the marinade.

    Add the chopped onion and marinate for 3 hours to overnight.

    Variation: Mix the marinated tomatoes with zucchini on a plate.
