Welsh Braised Leeks

- 12 leeks
- 1 small onion, chopped
- 1 Tbsp. butter
- 1 c. good stock
- slices of buttered toast
Directions

1Melt butter in a wide, shallow saucepan, add the chopped onion and saute until it is pale gold and softened.

2Trim and wash the leeks thoroughly; add them to saucepan.

3Pour in a cup of good stock and simmer, covered, until leeks are just tender.

4Serve on slices of buttered toast.
