- 2 eggs, separated
- 2 tsp. sugar
- 1 c. corn meal
- 1 c. milk
- 1 c. sifted all-purpose flour
- 2 Tbsp. butter, melted
- 3 tsp. baking powder
- pinch of salt
Directions

1Beat the egg whites.

2In another bowl, beat the egg yolks. Add the sugar and beat well.

3Add the corn meal, milk and flour. Add the melted butter, beaten egg whites, baking powder and salt. Pour into a greased tin pan.

4Bake in a 450° oven until golden brown.

5Serves 4 to 6.
