- 1 lb. ground beef
- 1/2 c. chopped onion
- 1/2 c. chopped bell pepper
- 1 can tomatoes
- 1/2 c. rice
- sliced American cheese
- salt and pepper to taste
Directions

1Brown ground beef in a small amount of oil. When ground beef is brown, drain.

2Add onion and bell pepper.

3When onion is done, add rice and tomatoes. Add salt and pepper to taste. If mixture gets too dry before rice is tender, add more tomatoes.

4When rice is tender, put the cheese on top and let melt.
