  • 1 1/2 lb. red snapper fillets or rockfish
  • 1 tsp. dried oregano
  • 2 tsp. chili powder
  • 1/4 tsp. cayenne
  • 2 Tbsp. all-purpose flour
  • 1/4 c. cornmeal
  • 1/2 tsp. salt
  • 2 Tbsp. butter, melted
  • 3 Tbsp. lemon juice

Directions

    Cut fish in serving size pieces, if necessary. On plate, combine oregano, chili powder, cayenne, flour, cornmeal and salt. On another plate, mix melted butter and lemon juice.

    Dip fish into butter mixture first, then press in cornmeal mix.

    Place in lightly buttered dish.

    Pour any remaining butter over fillets. Bake at 450° for 10 to 12 minutes, until fish flakes when touched.
