Ingredients
- 4 c. high gluten bread flour
- 4 tsp. salt
- 1/4 c. (4 pkg.) yeast
- 2 c. water
- 1 c. honey
- 1/2 c. margarine
- 2 c. cottage cheese
- 1 c. oatmeal
- 1 c. nuts (optional)
- 6 to 8 c. whole wheat flour
- 4 eggs
Directions

1Mix gluten flour, salt and yeast in large bowl.

2Mix water, honey, margarine and cottage cheese in saucepan.

3Heat to 125°. Margarine may not melt.

4Add warm mixture to flour mixture.

5Blend at low speed until moist.

6Add 4 eggs and beat for 3 minutes. Stir in oatmeal, nuts and 6 cups flour.

7Turn onto cupboard and knead 10 minutes adding extra flour if needed.

8Let rise 1 1/2 hours. Divide into 4 loaves.

9Rise 1 hour.

10Bake at 375° for 35 to 40 minutes.
