Ingredients

  • 4 c. high gluten bread flour
  • 4 tsp. salt
  • 1/4 c. (4 pkg.) yeast
  • 2 c. water
  • 1 c. honey
  • 1/2 c. margarine
  • 2 c. cottage cheese
  • 1 c. oatmeal
  • 1 c. nuts (optional)
  • 6 to 8 c. whole wheat flour
  • 4 eggs

Directions

    Mix gluten flour, salt and yeast in large bowl.

    Mix water, honey, margarine and cottage cheese in saucepan.

    Heat to 125°. Margarine may not melt.

    Add warm mixture to flour mixture.

    Blend at low speed until moist.

    Add 4 eggs and beat for 3 minutes. Stir in oatmeal, nuts and 6 cups flour.

    Turn onto cupboard and knead 10 minutes adding extra flour if needed.

    Let rise 1 1/2 hours. Divide into 4 loaves.

    Rise 1 hour.

    Bake at 375° for 35 to 40 minutes.
