- deep-dish unbaked pie shell
- 1 1/2 c. low-fat cottage cheese
- 3 eggs, separated
- 1/2 tsp. salt
- 3/4 c. sugar
- 3/4 tsp. vanilla
- 3 Tbsp. flour
- 3/4 c. light cream
- nutmeg
Directions

1Beat egg whites until foamy.

2Add 1/4 cup sugar slowly and keep beating until stiff.

3In separate bowl, beat cheese until smooth; add yolks.

4Beat well.

5Mix flour, salt and remaining sugar; add to mixture with vanilla.

6Pour into unbaked pie shell. Sprinkle top generously with nutmeg.

7Bake at 400° for 15 minutes, then at 350° for 30 minutes.

8Cool and chill.

9Keep refrigerated.
