- 1 tsp. unflavored gelatin
- 4 tsp. cold water
- 1 c. heavy whipping cream (very cold)
- 1/4 c. confectioners sugar
- 1/2 tsp. clear vanilla extract
Directions

1Combine gelatin and cold water in small saucepan.

2Let stand until thick.

3Place over low heat, stirring constantly, just until gelatin dissolves.

4Remove from heat and cool slightly.

5Whip the cream, sugar and vanilla until slightly thickened.

6While beating slowly, gradually add gelatin to whipped cream mixture.

7Whip at high speed until stiff.

8Yield: 2 cups.

9Cakes iced with this icing must be refrigerated.
