  • 12 medium pared potatoes, quartered
  • 1/2 c. butter or margarine
  • 1/2 c. half and half (I use milk, too)
  • 2 eggs
  • 2 tsp. salt
  • 1/8 tsp. pepper
  • 1 Tbsp. plus 1 1/2 tsp. Parmesan cheese
  • 3/4 tsp. paprika

Directions

    Cook potatoes in boiling water to cover, until tender; drain. Beat potatoes, butter, half and half, eggs, salt and pepper until smooth.

    Spread potatoes in buttered baking dish (13 1/2 x 8 3/4 x 1 3/4-inch), swirling top with spoon.*
