Ingredients
- 1 lb. yellow turnips, peeled and cut into 3/8-inch cubes
- 1/2 lb. white turnips, peeled and cut into 3/8-inch cubes
- 4 c. boiling water
- 1 1/2 tsp. butter
- 2 slices bacon, finely chopped
- 1/4 c. finely chopped onion
- 1/2 tsp. salt
- dash of white pepper
- 1 c. water
- chopped parsley (for garnish)
Directions

1In large saucepan, heat about 4 cups water to a boil; add turnips and boil 1 minute.

2Drain and set aside.

3In large skillet, melt butter.

4Add bacon and cook until bacon is almost crisp.

5Add onion and continue cooking until onion is tender, but not browned.

6Add the blanched, drained turnip; salt and pepper. Pour in 1 cup water.

7Cover and simmer over medium high heat until most of the liquid is absorbed and turnips are tender, stirring occasionally.
