Ingredients

  • 1 large chicken breast, skinless and boneless, cut into small pieces (approx. bite size)
  • 12 cup red hot sauce (or any other brand hot sauce)
  • 1 tablespoon lemon pepper
  • 32 ounces prepared northern white beans
  • 1 quart tomatoes, whole or crushed
  • 1 -2 cup cheddar cheese
  • 1 large yellow onion, chopped
  • 1 green pepper, seeded and chopped
  • 4 tablespoons lime juice
  • 2 teaspoons cumin
  • 2 teaspoons red pepper flakes, more or less depending on how hot you like it

    Place chicken in small bowl.

    Mix hot sauce and lemon pepper and pour over chicken, making sure to coat all pieces.

    Marinate at least 2 hours Mix the rest of the ingredients in a large pot or crock pot and set at low heat.

    Stir fry the chicken in a wok or skillet on high heat until the center of the chicken is no longer pink.

    Stir the chicken into the chile.

    Simmer on low at least 2 hrs, stirring occasionally.

    If using a crock pot, prepare the chile in the morning and cook on low all day.Can also prepare in a large covered casserole dish in the oven and bake it at 350 degrees for 1 hour.
