- 2 Tbsp. dried yeast
- 1 tsp. sugar
- 1/2 c. warm water
- 2 c. scalded milk
- 7 large tsp. shortening
- 10 to 12 c. flour
- 1 1/2 c. cold water
- 1 Tbsp. salt (if desired)
Directions

1Dissolve yeast and sugar in warm water.

2To milk, shortening and 1 1/2 cups cold water, add gradually 10 to 12 cups flour. After mixing about 3 cups flour to water mixture, add yeast mixture.

3Continue adding flour, until easy to knead and doesn't stick to board, about 10 to 15 minutes.

4Knead until indentations spring back.

5Grease top.

6Let rise until double in bulk.

7Rise in a warm place.

8If oven is cool, set a pan of boiling water in bottom of oven.

9Punch down and shape into loaves or rolls.

10Let rise until double in bulk.

11Bake at 375° for 35 or 40 minutes. Remove from pans immediately.

12Butter tops, if desired, while warm.

13Makes 4 loaves.
