  • 1 Tbsp. vegetable oil
  • 6 boneless chicken breasts
  • 1 large onion, chopped
  • 2 cloves garlic, chopped
  • 1 can S & W medium ready cut salsa
  • 3 cans S & W small white beans
  • 3 tsp. mesquite cooking sauce
  • 1/3 c. cilantro, chopped
  • grated Monterey Jack cheese

Directions

    Cut chicken in 1/2-inch chunks and saute in oil over medium heat.

    Add garlic and onion and stir until chicken is lightly browned.

    Add salsa, beans, cooking sauce and cilantro.

    Simmer 20 to 25 minutes.

    Top with cheese and additional cilantro if desired.
