- 1 Tbsp. vegetable oil
- 6 boneless chicken breasts
- 1 large onion, chopped
- 2 cloves garlic, chopped
- 1 can S & W medium ready cut salsa
- 3 cans S & W small white beans
- 3 tsp. mesquite cooking sauce
- 1/3 c. cilantro, chopped
- grated Monterey Jack cheese
Directions

1Cut chicken in 1/2-inch chunks and saute in oil over medium heat.

2Add garlic and onion and stir until chicken is lightly browned.

3Add salsa, beans, cooking sauce and cilantro.

4Simmer 20 to 25 minutes.

5Top with cheese and additional cilantro if desired.
