  • 1 1/2 lb. cooked, boneless, skinless chicken breast
  • 2 (14 oz.) cans chicken broth
  • 3 (16 oz.) cans white beans (navy or Northern beans)
  • 2 c. chopped white onion
  • 2 tsp. fresh minced garlic
  • 1 Tbsp. olive oil
  • 1 (4 oz.) can chopped jalapeno green peppers (mild)
  • 2 tsp. cumin
  • 1/4 tsp. cayenne pepper
  • dash of hot sauce
  • 1/4 tsp. oregano

Directions

    Chop chicken in bite size cubes.

    In a large skillet, pour chicken broth

    and add white beans with liquid.

    Simmer.

    Saute onions and garlic in olive oil.

    Add jalapeno peppers with liquid, then add to chicken broth with chicken and stir in cumin, oregano, cayenne and hot sauce.

    Bring to boil.

    Simmer for about 15 minutes.

    Serve with your favorite corn bread.
