- 1 1/2 lb. cooked, boneless, skinless chicken breast
- 2 (14 oz.) cans chicken broth
- 3 (16 oz.) cans white beans (navy or Northern beans)
- 2 c. chopped white onion
- 2 tsp. fresh minced garlic
- 1 Tbsp. olive oil
- 1 (4 oz.) can chopped jalapeno green peppers (mild)
- 2 tsp. cumin
- 1/4 tsp. cayenne pepper
- dash of hot sauce
- 1/4 tsp. oregano
Directions

1Chop chicken in bite size cubes.

2In a large skillet, pour chicken broth

3and add white beans with liquid.

4Simmer.

5Saute onions and garlic in olive oil.

6Add jalapeno peppers with liquid, then add to chicken broth with chicken and stir in cumin, oregano, cayenne and hot sauce.

7Bring to boil.

8Simmer for about 15 minutes.

9Serve with your favorite corn bread.
