Ingredients

  • 1 lb chicken breast, cubed (boneless, skinless)
  • 2 cups chicken broth, divided
  • 2 (15 ounce) cans great northern beans, rinsed
  • 1 cup chopped bell pepper
  • 1 cup chopped onion
  • 2 teaspoons minced garlic
  • 2 teaspoons jalapeno chili, minced
  • 2 teaspoons minced ginger
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 tablespoon cornstarch
  • salt and pepper

Directions

    Combine all ingredients, except 1/2 cup chicken broth, cornstarch, salt and pepper in slow cooker.

    Cover and cook on low for 6-8 hours.

    Cook on high 10 minutes, stirring in combined remaining stock and cornstarch, stirring 2-3 minutes.
