Ingredients

  • 1 lb. dried small white beans, rinsed and picked over
  • 3 Tbsp. olive oil
  • 1 large onion, minced
  • 3 cloves garlic, minced
  • 2 (4 oz. each) cans chopped green chiles, undrained
  • 1 Tbsp. ground cumin
  • 1 Tbsp. dried oregano
  • pinch of cayenne pepper
  • 8 to 10 c. canned chicken broth
  • 4 c. leftover cooked turkey, cut into 1-inch pieces
  • salt and freshly ground pepper to taste
  • 3/4 lb. shredded Monterey Jack cheese
  • store bought salsa (for garnishing)
  • sour cream (for garnishing)
  • minced fresh cilantro (for garnishing)

Directions

    The night before, place beans in a large pot or bowl.
