Ingredients

  • 1 to 1 1/2 lb. chicken, cut into chunks
  • 1 onion, diced
  • 3 (15 oz.) cans Great Northern beans
  • 1 can chicken broth (low sodium)
  • 1 can green chiles
  • 2 tsp. cumin
  • 1/4 tsp. red pepper
  • salt and pepper to taste
  • sour cream (optional)
  • Monterey Jack cheese (optional)

Directions

    In large pan, fry chicken and onion in cooking oil until well browned.

    Add the rest of the ingredients except for the sour cream and cheese.

    Simmer covered on low heat for 30 minutes, stirring occasionally.
