  • 1/2 lb. dried Great Northern beans or 2 cans
  • 1 tsp. oregano
  • 1/2 tsp. ground cumin
  • 1/2 tsp. seasoned salt
  • 1/8 tsp. cayenne pepper
  • 2 boneless skinless chicken breasts
  • 1/2 c. diced onion
  • 1 clove garlic, minced
  • 2 Tbsp. cooking oil
  • 2 cans chicken broth
  • 2 oz. chopped green chiles

Directions

    Cook beans until tender. Heat oil in skillet over medium-high heat. In shallow bowl or bag, combine spices. Cut chicken into 1/2-inch cubes; toss in spice mixture to coat. Saut chicken in oil 2 minutes; add onion and garlic and cook until onion is translucent. Add to beans, along with broth and green chiles. Simmer for 1 hour. Tastes even better the next day.
