White Chocolate Cake

- 2 c. sugar
- 1 c. butter or margarine
- 4 eggs
- 2 1/2 c. cake flour (I use plain)
- 1/4 tsp. salt
- 1 tsp. baking powder
- 1 c. buttermilk
- 1 c. pecans, chopped
- 1 c. coconut
- 1 tsp. vanilla
- 1/4 lb. white chocolate, melted over hot water
Directions

1Cream together the butter and sugar until light.

2Add melted chocolate, then the eggs, one at a time, beating well after each addition.

3Sift flour, salt and baking powder together.

4Then add to the batter alternately with the buttermilk, beating well.

5Fold in pecans and coconut.

6Pour into two greased and floured 9-inch cake pans.

7Bake at 350° for 45 minutes.

8(I bake in 3 pans until done, about 25 minutes.)
