White Chocolate Cake

  • 1/4 lb. white chocolate, melted
  • 1 c. butter
  • 2 c. sugar
  • 4 eggs
  • 2 1/2 c. cake flour, unsifted
  • 1 c. buttermilk
  • 1/4 tsp. salt
  • 1 tsp. baking powder
  • 1 tsp. vanilla
  • 1 c. chopped pecans
  • 1 c. flaked coconut
  • 1 c. maraschino cherries, chopped

    Preheat oven to 350°.

    Melt chocolate over hot water; cool. (May add few drops hot water to prevent hardening.) Cream butter and sugar; add melted chocolate and then eggs, one at a time. Beat well.

    Sift dry ingredients together; add to creamed mixture alternately with buttermilk.

    Add pecans, coconut and cherries, then vanilla.

    Turn into greased and floured 10-inch tube pan. Bake 1 hour and 15 minutes in 350° oven.
