White Chocolate Pound Cake

  • 1 c. shortening (Crisco)
  • 3 c. sifted, plain flour
  • 1/2 tsp. baking powder
  • 2 1/2 c. sugar
  • 1/4 lb. white chocolate
  • 3/4 c. milk
  • 6 eggs (I use jumbo)
  • 1 tsp. vanilla

    In a large mixer bowl, cream the shortening and sugar, beating well.

    Add eggs, one at a time, beating well after each addition. Melt white chocolate in double boiler or microwave.

    (Microwave on High for 2 minutes and stir until thoroughly smooth.)

    Cool and add to shortening-sugar mixture.

    Sift flour and baking powder together.

    Add vanilla flavoring.

    Bake in a large tube pan (10-inch), greased and floured, in a preheated oven at 300° for 1 1/4 hours.

    Test for doneness by inserting a straw or toothpick.
