  • 2 whole Eggs, Room Temperature
  • 1 cup Milk, Room Temperature
  • 3/4 cups Flour
  • 1/4 teaspoons Kosher Salt (or Half As Much Table Salt)
  • 3 Tablespoons Salted Butter

    It's VERY important that the eggs and milk are room temperature. It won't turn out right otherwise. I usually measure out the milk and set the eggs out about half an hour before I want to make these.

    1. Preheat oven to 450F.

    2. Whisk together eggs, milk, flour, and salt until few lumps remain.

    3. Cut butter into 12 pieces and put one into each muffin well. Put in oven 2 minutes till butter is foamy.

    4. Remove muffin pan from oven and fill each cup 1/2 full of batter, using it all.

    5. Bake 15 minutes. Don't peek at them either.

    Serve immediately.
