  • 5 eggs
  • 1/2 lb. butter
  • 1 c. sugar
  • 1 3/4 c. plain flour
  • 1/2 tsp. baking powder
  • 3/4 lb. cherries (candied)
  • 1 lb. pineapple (candied)
  • 4 c. pecans
  • 1/2 tsp. vanilla
  • 1/2 tsp. lemon extract

    Chop nuts and fruit.

    Dredge with 1/4 cup flour.

    Cream butter and sugar until light and fluffy.

    Add well beaten eggs and blend well.

    Sift remaining flour and baking powder together.

    Pour into eggs and butter mixture.

    Add vanilla and lemon extract.

    Add fruit and nuts.

    Blend well with your hands.

    Grease pan well, pour in batter and bake for 1 1/2 hours at 300°.
