  • 3 c. sugar
  • 1/2 lb. butter
  • 6 eggs
  • 1 lb. coconut
  • 1 large can crushed pineapple, drained (save juice)
  • 1 pt. maraschino cherries, cut in pieces (leave some whole to decorate loaves before baking)
  • 1 lb. shelled walnuts, broken in pieces
  • 1 lb. shelled pecans, broken in pieces
  • 4 c. flour
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 1 Tbsp. vanilla
  • 2 Tbsp. almond extract
  • 3/4 c. pineapple juice
  • 2 to 3 jiggers rum

    Cream sugar, eggs and butter well.

    Mix until light and fluffy.

    Add pineapple and cherries.

    Add flour, baking powder and salt.

    Add nuts, flavorings, coconut and pineapple juice.

    Mix well.

    Bake at 275° in 2 to 3 loaf pans for 1 1/2 hours or until toothpick comes out clean.
