- 1 lb butter
- 2 cups sugar
- 8 eggs
- 1 lemon, juice and rind of, grated
- 3 cups flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 12 lbs white raisins
- 1 lb red glazed cherries
- 1 lb green glazed cherries
- 12 lb blanched almond
- 12 lb cut mixed peel
- 12 lb cut citron
- 12 lb pineapple ring
- 1 cup flour (for dusting fruit)
Directions

1Prepare and dust fruit with one cup flour.

2Cream butter and sugar.

3Add eggs, juice and rind of lemon.

4Combine flour, baking powder, and salt.

5Add mixing well.

6Add prepared fruit.

7Put in greased tins which have been lined with one layer of brown paper and one layer of waxed paper.

8bake 300F reducing heat to 275F after first half hour of baking to prevent cake from becoming too brown.

9Cooking time approx 3 hours.
