Ingredients

  • 1# dried Navy Beans or 3 cans rinsed
  • 2 quarts low sodium Chicken Broth
  • 1 can Corn
  • 1 Large Onion
  • 5 Cloves Garlic
  • 1 tsp Pepper
  • 1 Tbs Oregano
  • 1-2 Tbs Cumin depending on taste
  • 1/4 cup Ground Coriander
  • 1/2 tsp ground clove
  • 2-10 oz cans of chunk white chicken(drained) or boiled chicken
  • 4 oz chopped green chilies
  • 2 jalapenos seeded and chopped
  • 1# shredded Monterey Jack or chedder cheese
  • 8 oz sour cream
  • Cilantro chopped

    Quick method

    Combine all products except for cheese, sour cream and cilantro. Use canned Beans and Chicken. Simmer for 30 min. Serve

    Sort and wash dried beans; cover with 2 inches water and bring to a boil for 3 minutes. Remove from heat and Let soak for 5-6 hours covered.

    Drain water from beans and add 1 quart broth and add the next 8 ingredients. Bring to boil andreduce heat and simmer for 2-3 hours or until beans are tender. Stir occasionally.

    Add last quart chicken broth, chicken, green chilies, and jalapenos. Cover and simmer 1 hour, stirring occasionally.

    Serve with cilantro, cheese and sour cream.
