White Macadamia Nut Cookies

- 1/2 c. shortening
- 2 1/2 c. all-purpose flour
- 2 eggs
- 1/2 tsp. baking soda
- 1 c. chopped Macadamia nuts
- 1/2 c. margarine or butter
- 1 c. packed brown sugar
- 1 tsp. vanilla
- 1 (12 oz.) pkg. white chocolate chips
Directions

1In mixing bowl, beat the shortening and margarine or butter with an electric mixer on medium to high speed for 30 seconds. Add about half of the flour, the brown sugar, eggs, vanilla and baking soda.

2Beat mixture until thoroughly combined.

3Beat in remaining flour.

4Stir in chocolate pieces and, if desired, nuts. Drop dough by rounded teaspoonfuls 2 inches apart onto an ungreased cookie sheet.

5Bake in 375° oven for 8 to 10 minutes or until edges are lightly browned.

6Cool.

7Makes 60 cookies.
