- 4 white potatoes
- 1 large red bell pepper, diced
- 1 medium size, yellow onion, diced
- 2 cloves garlic, minced
- 1/4 c. butter
- 3 Tbsp. lemon juice (optional)
- lemon pepper
- salt
Directions

1Dice potatoes and soak in salted, ice water for at least 20 minutes.

2In the meantime, saute the onion, bell pepper and garlic in the butter over low-medium heat for 20 minutes; don't brown. Drain the potatoes and add them to the onion and bell pepper; cook an additional 30 minutes or until potatoes are slightly browned and done.

3Salt and pepper to taste.
