  • 1 (3 oz.) box lemon Jell-O
  • 1 c. chopped celery
  • 1/2 pt. whipped cream
  • 1 (No. 2) can sliced pineapple, drained and cut in small chunks (save juice)
  • 2 small pkg. cream cheese, softened
  • 1 c. chopped nuts
  • 3 slices sweet pimento, chopped fine

Directions

    Dissolve Jell-O in 1 cup boiling water.

    Add 1 cup pineapple juice and cream cheese and stir until evenly blended.

    Add pineapple, celery and nuts.

    Gently fold in whipped cream and pimentos.

    Pour in dish or mold to chill overnight.

    Serve on lettuce leaf.
